Ingredients
  

  • 8 ounces Feta Cheese, blocked in brine preferred
  • 1/2 cup Greek Yogurt, full-fat for best results
  • 2 ounces Cream Cheese, softened to room temperature
  • 2 tablespoons Extra Virgin Olive Oil, plus more for drizzling
  • 1 tablespoon Lemon Juice, freshly squeezed
  • 1 teaspoon Lemon Zest, from one organic lemo
  • 1 clove Garlic, small and finely minced
  • 1 tablespoon Fresh Dill, finely chopped
  • 1/2 teaspoon Red Pepper Flakes, optional for heat

Method
 

  1. Crumble the feta cheese into small chunks and place it in the bowl of a food processor.
  2. Add the Greek yogurt, softened cream cheese, extra virgin olive oil, lemon juice, minced garlic, and lemon zest.
  3. Pulse the mixture several times, then blend on high speed for about two minutes until smooth and velvety.
  4. Scrape down the sides of the bowl halfway through to ensure even blending.
  5. If the mixture is too thick, add a teaspoon of water or more olive oil while blending.
  6. Taste and adjust seasoning if necessary, then transfer to a serving bowl.
  7. Create decorative swirls on the surface and garnish with fresh dill and red pepper flakes.

Notes

Start with room temperature ingredients for a smoother texture. Store in an airtight container in the refrigerator for up to five days.
