- Prepare strawberries by washing, hulling, and quartering them. Pat dry.
- Beat cream cheese in a large bowl until smooth. Add powdered sugar and vanilla, and mix until combined.
- In a separate bowl, whip cold heavy cream until stiff peaks form.
- Gently fold whipped cream into the cream cheese mixture.
- Add strawberries, mini marshmallows, and drained pineapple to the mixture and fold gently.
- Transfer to a serving bowl, cover, and refrigerate for at least 2 hours before serving.
