Ingredients
  

  • 2 ribeye or New York strip steaks (10-12 oz each, 1-1.5 inches thick)
  • 4 medium russet potatoes
  • 6 cups vegetable or peanut oil
  • Kosher salt to taste
  • 2 tsp black pepper, freshly ground
  • 1 tsp garlic powder (optional)
  • 3 tbsp unsalted butter
  • 3 sprigs fresh thyme (optional)
  • 3 garlic cloves, smashed

Method
 

  1. Prepare the Potatoes: Peel and cut potatoes into ¼-inch thick sticks. Soak in cold water for at least 30 minutes.
  2. First Fry: Drain and pat potatoes dry. Heat oil to 325°F and fry potatoes for 5-7 minutes until tender. Remove and let cool.
  3. Prepare the Steaks: Let steaks sit at room temperature for 30 minutes. Pat dry and season with salt and pepper.
  4. Sear the Steaks: Heat a cast-iron skillet over high heat, add oil, and sear steaks for 3-4 minutes on each side for medium-rare.
  5. Add Butter and Aromatics: Reduce heat, add butter, garlic, and thyme. Baste steaks with melted butter for 1-2 minutes.
  6. Rest the Steaks: Transfer steaks to a cutting board and let rest for 5-10 minutes.
  7. Second Fry: Increase oil temperature to 375°F and fry potatoes again for 2-3 minutes until golden brown. Drain and season with salt.
  8. Serve: Plate steak and fries together, drizzle pan juices over steak, and serve immediately.

Notes

Ensure to soak potatoes for crispier fries. Use a meat thermometer for perfect steak doneness.
