- Prepare the Potatoes: Peel and cut potatoes into ¼-inch thick sticks. Soak in cold water for at least 30 minutes.
- First Fry: Drain and pat potatoes dry. Heat oil to 325°F and fry potatoes for 5-7 minutes until tender. Remove and let cool.
- Prepare the Steaks: Let steaks sit at room temperature for 30 minutes. Pat dry and season with salt and pepper.
- Sear the Steaks: Heat a cast-iron skillet over high heat, add oil, and sear steaks for 3-4 minutes on each side for medium-rare.
- Add Butter and Aromatics: Reduce heat, add butter, garlic, and thyme. Baste steaks with melted butter for 1-2 minutes.
- Rest the Steaks: Transfer steaks to a cutting board and let rest for 5-10 minutes.
- Second Fry: Increase oil temperature to 375°F and fry potatoes again for 2-3 minutes until golden brown. Drain and season with salt.
- Serve: Plate steak and fries together, drizzle pan juices over steak, and serve immediately.
