Ingredients
  

  • 8 oz Cream Cheese, softened to room temperature
  • 1/2 cup Sour Cream, full-fat for best flavor
  • 1/4 cup Mayonnaise, adds a rich, silky finish
  • 3 cloves Garlic, minced or pressed
  • 1/2 cup Parmesan Cheese, freshly grated
  • 1 cup Mozzarella Cheese, divided for mixing and topping
  • 10 oz Frozen Spinach, thawed and squeezed very dry
  • 14 oz can Artichoke Hearts, drained and chopped
  • 1/2 tsp Black Pepper, freshly ground
  • 1/4 tsp Red Pepper Flakes, optional for a tiny kick

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Prepare your baking dish.
  2. Squeeze the thawed spinach in a clean kitchen towel to remove all liquid.
  3. In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise until smooth.
  4. Stir in the minced garlic, black pepper, and red pepper flakes.
  5. Add half of the mozzarella cheese and all the parmesan cheese. Fold in the chopped artichoke hearts and prepared spinach.
  6. Transfer the mixture into the prepared baking dish and spread it out evenly.
  7. Sprinkle the remaining mozzarella cheese over the top.
  8. Bake for 20 to 25 minutes until the edges are bubbling and the top is beginning to brown.
  9. For an extra golden finish, turn on the broiler for the last two minutes, watching closely to prevent burning.
  10. Let it rest for five minutes before serving.

Notes

Use full-fat dairy for the creamiest texture. Grate your own cheese for best melting results. You can prepare the dip a day in advance and bake it when ready.
