Ingredients
  

  • 1 Large Ripe Cantaloupe
  • 1/4 Pound Prosciutto di Parma
  • 8 Ounces Fresh Mozzarella Pearls (optional)
  • 1 Small Bunch Fresh Basil Leaves
  • 2 Tablespoons Balsamic Glaze
  • 20-24 Pieces Wooden Skewers

Method
 

  1. Cut the cantaloupe in half and remove the seeds. Use a melon baller to create uniform spheres or cut into one-inch cubes.
  2. Cut the prosciutto into long ribbons for easier threading.
  3. Thread a piece of prosciutto onto a skewer, followed by a basil leaf and a mozzarella pearl if using.
  4. Fold the prosciutto back over the cheese and add a melon ball, creating an 'S' shape.
  5. Finish the skewer with another fold of prosciutto or a piece of melon to secure.
  6. Arrange on a platter and drizzle with balsamic glaze before serving.
