  • 20 oz package cheese tortellini
  • 2 cups heavy cream
  • 2 cups chicken or vegetable broth
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Method
 

  1. Melt butter in a large, deep skillet or Dutch oven over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Pour in the chicken broth and heavy cream. Stir together and bring to a gentle simmer.
  3. Add the tortellini directly to the liquid. Stir gently to ensure all pieces are submerged. Sprinkle in the Italian seasoning, salt, and pepper.
  4. Cook the tortellini according to package directions, typically 7-10 minutes, stirring occasionally.
  5. Once the tortellini is tender, reduce heat to low. Gradually stir in the freshly grated Parmesan cheese until melted and smooth.
  6. Taste and adjust seasonings as needed. If too thick, add additional broth or cream; if too thin, simmer for another minute or two.
  7. Remove from heat and let rest for 2-3 minutes. Garnish with fresh parsley and extra Parmesan before serving.

Notes

Use freshly grated Parmesan cheese for the smoothest sauce. Allow the dish to rest after cooking to thicken the sauce.
