Ingredients
  

  • 32 oz Whole Kernel Cor
  • 8 oz Cream Cheese
  • 1/2 cup Sour Cream
  • 1/4 cup Unsalted Butter
  • 4 oz Diced Green Chilies
  • 1.5 cups Shredded Cheddar Cheese
  • 1 tsp Chili Powder
  • 1/2 tsp Ground Cumi
  • 1/2 tsp Garlic Powder
  • Salt and Black Pepper to taste
  • 2 tbsp Fresh Cilantro
  • Lime Wedges for serving

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Lightly grease a 9x13 inch baking dish with butter or non-stick spray.
  3. In a large mixing bowl, combine softened cream cheese, sour cream, and melted butter until smooth.
  4. Stir in chili powder, ground cumin, garlic powder, salt, and black pepper.
  5. Fold in corn kernels and diced green chilies until evenly coated.
  6. Add one cup of shredded cheddar cheese and stir to combine.
  7. Pour the mixture into the prepared baking dish and spread evenly.
  8. Bake for approximately 30 minutes, then sprinkle remaining cheese on top.
  9. Return to the oven for another 10 to 15 minutes until cheese is melted and bubbly.
  10. Let rest for five minutes before garnishing with fresh cilantro and serving with lime wedges.

Notes

Ensure cream cheese and sour cream are at room temperature to avoid lumps. Use fresh or high-quality frozen corn for best results. Adjust seasoning based on the sweetness of the corn.
