Ingredients
  

  • 4 large Egg Whites
  • 1 cup Granulated Sugar
  • 1/4 teaspoon Cream of Tartar
  • 1 tablespoon Fresh Lemon Zest
  • 1 teaspoon Fresh Lemon Juice
  • 1/2 teaspoon Vanilla Extract
  • 2 drops Yellow Food Coloring (optional)
  • 1 pinch Salt

Method
 

  1. Preheat your oven to 200 degrees Fahrenheit and line two baking sheets with parchment paper.
  2. Ensure your mixing bowl and whisk attachment are clean and grease-free.
  3. Place the egg whites in the bowl, add salt and cream of tartar, and whisk on medium-low speed until foamy.
  4. Increase speed to medium-high and whisk until soft peaks form, then add sugar one tablespoon at a time until glossy and stiff peaks form.
  5. Gently fold in lemon zest, lemon juice, vanilla extract, and food coloring.
  6. Transfer the mixture to a piping bag and pipe onto prepared baking sheets, spacing them an inch apart.
  7. Bake for about 90 minutes, then turn off the oven and leave the cookies inside with the door slightly ajar for at least another hour.

Notes

Store in an airtight container at room temperature for up to two weeks. Avoid high humidity when baking.
