Method
- Preheat your oven to 200 degrees Fahrenheit and line two baking sheets with parchment paper.
- Ensure your mixing bowl and whisk attachment are clean and grease-free.
- Place the egg whites in the bowl, add salt and cream of tartar, and whisk on medium-low speed until foamy.
- Increase speed to medium-high and whisk until soft peaks form, then add sugar one tablespoon at a time until glossy and stiff peaks form.
- Gently fold in lemon zest, lemon juice, vanilla extract, and food coloring.
- Transfer the mixture to a piping bag and pipe onto prepared baking sheets, spacing them an inch apart.
- Bake for about 90 minutes, then turn off the oven and leave the cookies inside with the door slightly ajar for at least another hour.
