Ingredients

  • 1 1/4 cups yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1/3 cup honey
  • 1/2 cup unsalted butter, melted
  • 1 large egg, beate

Method

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and grease a 9x5-inch loaf pan.
  2. In a large mixing bowl, whisk together the yellow cornmeal, all-purpose flour, baking powder, and salt.
  3. In a separate bowl, whisk the melted butter, honey, milk, and beaten egg together.
  4. Pour the wet ingredients into the dry ingredients and fold gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 30 to 35 minutes, or until a toothpick inserted comes out clean.
  7. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure to use fresh baking powder for best results. Avoid overmixing the batter to prevent a dense loaf. For added flavor, brush the top with melted butter and honey after baking.
