Ingredients

  • 2 large English Cucumbers, sliced into 3/4 inch rounds
  • 8 oz Cream Cheese, softened to room temperature
  • 2 tbsp Greek Yogurt or Sour Cream, plain and unsweetened
  • 2 tbsp Fresh Dill, finely chopped
  • 1 tsp Lemon Zest, use a microplane for best results
  • 1/2 tsp Garlic Powder
  • Salt and Pepper, to taste
  • Garnish (Optional): Radish slices, smoked salmon, or extra dill

Method

  1. Wash the cucumbers thoroughly and pat them dry. Slice the cucumbers into rounds that are about 3/4 of an inch thick.
  2. Lay the cucumber rounds on a paper towel to remove excess moisture.
  3. In a medium mixing bowl, combine the softened cream cheese, Greek yogurt, garlic powder, lemon zest, and chopped dill. Blend until light and fluffy.
  4. Taste the mixture and add salt and pepper as needed.
  5. Use a piping bag fitted with a star tip to pipe the herb mixture onto each cucumber slice.
  6. Garnish with an extra sprig of dill or your chosen topping. Arrange on a platter and serve immediately.

Notes

Ensure cream cheese is softened for a smooth filling. Pat cucumber slices dry to prevent sogginess. Assemble bites just before serving for the best texture.
