  • 2 medium Fresh Zucchini, sliced into 1/4 inch thick rounds
  • 1/2 cup Parmesan Cheese, grated fresh
  • 1/2 cup Panko Breadcrumbs
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Dried Oregano
  • 2 tablespoons Extra Virgin Olive Oil
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Prepare your baking sheet by lining it with parchment paper or a silicone baking mat.
  3. Wash and pat dry the zucchini, then slice into uniform rounds.
  4. In a large mixing bowl, drizzle the zucchini slices with olive oil and toss to coat.
  5. In a separate bowl, combine Parmesan cheese, Panko breadcrumbs, garlic powder, oregano, salt, and pepper.
  6. Press each zucchini slice into the cheese mixture, coating both sides.
  7. Arrange the coated slices in a single layer on the prepared baking sheet.
  8. Bake for 15 to 20 minutes, rotating the pan halfway through, until golden brown.
  9. Let them rest for two minutes before serving.

Notes

To prevent soggy rounds, pat zucchini dry before oiling. Use a wire rack for even cooking. Serve immediately for best texture.
