Ingredients
  

  • 8 oz Fresh Mozzarella Pearls
  • 1 Pint Cherry Tomatoes
  • 1 Bunch Fresh Basil Leaves
  • 1/2 Cup Prepared Basil Pesto
  • 2 Tbsp Balsamic Glaze
  • 1 Tbsp Extra Virgin Olive Oil
  • Salt and Black Pepper to taste
  • 20-24 Wooden Skewers

Method
 

  1. Wash the cherry tomatoes and pat them dry thoroughly.
  2. Rinse the basil leaves and gently dry them between paper towels.
  3. Place your pesto in a small bowl and whisk in olive oil if necessary.
  4. Take a bamboo skewer and slide on one cherry tomato, followed by a folded basil leaf.
  5. Add one mozzarella pearl onto the skewer.
  6. Dip the mozzarella end of the skewer into the pesto or dollop pesto over the cheese.
  7. Arrange the skewers on a serving platter and sprinkle with salt and pepper.
  8. Drizzle balsamic glaze over the skewers just before serving.

Notes

Enjoy immediately after assembly for the best quality. Store leftovers in an airtight container for up to 24 hours.
