  • 6 large hard-boiled eggs, chopped
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 cup milk
  • 3 stalks green onions, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Vegetable oil for frying

Method
 

  1. Chop hard-boiled eggs into small, bite-sized pieces.
  2. In a large mixing bowl, combine flour, baking powder, garlic powder, salt, black pepper, and paprika. Whisk together.
  3. Gradually pour in the milk while stirring continuously until a smooth batter forms.
  4. Fold in the chopped hard-boiled eggs, green onions, and parsley gently.
  5. Heat about 2 inches of vegetable oil in a deep skillet over medium-high heat until it reaches 350°F.
  6. Drop spoonfuls of batter into the hot oil, frying 3-4 fritters at a time.
  7. Fry for 2-3 minutes per side until golden brown and crispy.
  8. Remove fritters and drain on paper towels. Serve hot.

Ensure oil is at the right temperature to avoid soggy fritters. Store leftovers in an airtight container for up to 3 days.
