  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1.5 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) and grease a 4x8-inch loaf pan.
  2. In a large mixing bowl, mash the ripe bananas until smooth with a few small lumps.
  3. Pour the melted butter into the mashed bananas and stir until well combined.
  4. Add the sugar, beaten egg, and vanilla extract, whisking vigorously to incorporate air.
  5. Sprinkle the baking soda and salt over the wet ingredients and stir again.
  6. Gently fold in the all-purpose flour using a rubber spatula, being careful not to overmix.
  7. Fold in 3/4 cup of the chocolate chips.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Sprinkle the remaining 1/4 cup of chocolate chips over the surface.
